Despite being a tender herb that cant be grown outside in the UK during winter, lemongrass (Cymbopogon) has remained one of the most popular herbs amongst British culinary enthusiasts. From stir frys to salads, spice rubs and curry pastes, lemongrass has earned itself quite the reputation for providing a fantastic finishing touch. A central element of tom yum soup and Thai carrot soup, there are many established recipes to follow when chefs arent overtaken by the creative impulse. Sauces can also be tastefully infused with lemongrass. White wine sauce, for example, will always benefit from a little extra zing when complemented by the herb. Its also worth noting that its antioxidant properties and assortment of vitamins make it a particularly healthy ingredient to cook with.

Particularly sensitive to colder temperatures, lemongrass is best grown undercover and ideally kept in a humid indoor space. This dependence on heat can be further enhanced by placing the plant in a polytunnel if its brought outside during the summer. Of course, because you may find yourself moving your lemongrass outside during the hotter months, it is best placed in a container to protect it during any moves that it makes. Its also worth remembering that lemongrass will need to be moved into a larger container the moment that roots begin to show through the container they were originally grown in.

Usage

Besides serving as an incredible addition to a variety of meals, lemongrass also forms a great base for drinks, specifically, lemongrass tea and cocktails. When it comes to tea, dried lemongrass can be steeped or boiled to create a soothing and sweet drink perfect for any time of day. Similarly, lemongrass can be combined with ginger, mint and gin to create the famous Soho cocktail.
