The crunchy stems of the puntarelle (“little point” leaves) appear as sprouts with dandelion shaped leaves and are pleasantly bitter and tender, perfect for fresh eating, suitable to the name, which means “green flame”. When preparing, they can be allowed to rest in ice water for an hour to temper bitterness. Transplant seedlings 28 to 30 days after seeding. 65-70 days
