The lovely broad leaf sorrel has a refreshing lemony bite that is an excellent addition to dishes, sauces and salads. It is one of the first green leaves to grow in spring and can be used in a cut and come again way. It is thought to help cleanse the blood and makes a good spring tonic.

A very easy and satisfying herb to grow and a welcome sight in spring when we are all craving some home grown greenery.It grows happily in a more shaded site and loves a nutrient rich soil.Itdoesgrow more successfully in the ground because it has access to all the food it needs, but can be grown in a pot where it will want regularliquid feeds, though eventually the leaves will get smaller as it becomes root bound. If this happens, part of the root ball can be cut off in spring before potting back into the same potagain and as the roots find the new compost the leaves will shoot away again.

Usage

The fresh green leaves of sorrel are used in many spring dishes. Fresh sorrel sauce for use with fish and meats is made by sauteing thinly sliced leaves in butter before adding cream, it can be made into soups, a vibrant green pesto, add bite to salads and tastes particularly good with in omelettes.
